Wheatgrass is obtained by allowing the sprouted organic wheat grains to grow up to a height of about 6 inches till the queen leaf begins to form stems. In Indian Climates it is grown for 7 days for it to acheive this stage. It is then harvested at this 'Jointing' stage when maximum beneficial nutrients are stored in the tender green blades of grass. Wheatgrass has the capacity to absorb 92 of the 108 minerals from the soil at this stage.
